Skippy Truffle CookiesWith only 5 ingredients, these peanut butter-chocolate chip cookies take literally 5 minutes to make. (This is one recipe where you really DO have to preheat the oven before you start.) I got this recipe from Camille Lara in 2017 when she brought some of them to work and shared. She had the recipe memorized and I wrote it down on a napkin. First thought? They have no truffles in them.

Slow Cooked Southwest Chicken StewOnly 1/2 hour of prep time and the cooking skills of opening cans gets you out of the kitchen in no time and enjoying a fantastic dinner later on. Garnish with sour creme, tortilla chips and cilantro, and no one will ever know you opened a few cans to make this dish.

I got this recipe from Valerie Magoaoy as it was passed around at Costco in 2010.
