Blueberry Breeze Cooler

We made these for Christmas in 2018, and they were a nice cold drink that still had that holiday touch with the fruit on toothpicks. We mixed the Vodka and Lemonade ahead of time to save a bit of time, and didn’t bother with the shaker since we were serving so many people. Just pour it over ice in a lowball and add the splash of Club Soda. We added raspberries to the fruit too.

Irish Beef Stew

irish-beef-stewLisa found this one in 2017 while looking for something new to bring to our neighborhood St. Patrick’s Day party. It’s a basic beef stew except for the tomato paste and Guinness beer. It was good nonetheless, and so we saved it.

Skippy Truffle Cookies

Skippy Truffle CookiesWith only 5 ingredients, these peanut butter-chocolate chip cookies take literally 5 minutes to make. (This is one recipe where you really DO have to preheat the oven before you start.) I got this recipe from Camille Lara in 2017 when she brought some of them to work and shared. She had the recipe memorized and I wrote it down on a napkin. First thought? They have no truffles in them.
