In the summer of 2018 got our Vistabule Teardrop, and got back into camping. With that came pie iron cooking. I saved these few recipes off the pie iron package.

Summer Berry Cheesecake Salad
This recipe starts with fresh berries, and lots of them. I use equal parts of strawberries, blueberries, raspberries and blackberries.You don’t have to use all four types of berries, it’s fine to mix and match with whatever you have on hand. Sometimes I add pitted and halved fresh cherries too for a special treat. This recipe will not work with frozen fruit!

Skippy Truffle Cookies
With only 5 ingredients, these peanut butter-chocolate chip cookies take literally 5 minutes to make. (This is one recipe where you really DO have to preheat the oven before you start.) I got this recipe from Camille Lara in 2017 when she brought some of them to work and shared. She had the recipe memorized and I wrote it down on a napkin. First thought? They have no truffles in them.
