No-Knead Bread (New York Times Recipe)

This awesome bread was first brought to my attention by Vince Gee who told me where to find it (by Googling “New York Times Bread Recipe”) in around 2012.  I had great success several times and then bombed several in a row. Use fresh yeast, not the stuff that’s been sitting around in the cupboard for the last 5 years. It’s super easy, takes about 15 minutes to prepare and is a great way to get a newbie baking bread.

Blueberry Breeze Cooler

We made these for Christmas in 2018, and they were a nice cold drink that still had that holiday touch with the fruit on toothpicks. We mixed the Vodka and Lemonade ahead of time to save a bit of time, and didn’t bother with the shaker since we were serving so many people. Just pour it over ice in a lowball and add the splash of Club Soda. We added raspberries to the fruit too.

Summer Berry Cheesecake Salad

This recipe starts with fresh berries, and lots of them. I use equal parts of strawberries, blueberries, raspberries and blackberries.You don’t have to use all four types of berries, it’s fine to mix and match with whatever you have on hand. Sometimes I add pitted and halved fresh cherries too for a special treat. This recipe will not work with frozen fruit!

Banana Bread

banana-breadWhen I was about 20 years old, I lost my fantastic banana bread recipe. It was a nut-less recipe, which I prefer. I’ve tried several in the years since and then gave up. I’ve thrown away countless ripe bananas over the years. In 2018, I finally found a great recipe! This very simple recipe has a moist texture, and makes 1 loaf. The one downfall? It requires greek yogurt which I don’t usually have on hand.

I added the orange or lemon extract which made it even better.
